Vegetarian Chilli
Looking at the recipies they are all a variation on this
2 onions
2-4 cloves garlic
1 tbsp. cumin (more or less to taste)
1 tbsp. oregano
Recipie #1
2 lg. onions, coarsely chopped
4 lg. cloves garlic, finely chopped
1 (4 oz.) can mild or med. green chilies
3 (14 oz.) cans stewed tomatoes
2 green peppers, chopped
2 lg. carrots, chopped
1 (15 oz.) can kidney beans, drained and rinse
1 (15 oz.) can black beans, drained and rinsed
1 med. zucchini, diced
1/2 tsp. salt
1 tbsp. chili powder
1 1/2 tsp. ground cumin
1 tsp. ground coriander
1/2 tsp. dried oregano
1/2 tsp. dried marjoram
1/4 tsp. cinnamon
May saute and add coarsely chopped turkey or chicken for a non-vegetarian chili.

Pickled beetroot
1. Get beetroot & rinse
2. Boil for 20 mins
3. Put in Jar with malt vinigar
4. Can add bay leaves / pepper / cumin (if can be arsed)

Pickled onions
They are really easy - 3 steps
1. Peel onions (hardest bit)
2. Brine onions (put in saltwater for a day) (you don't even need to this if you can't be bothered)
3. Put onions in jar with vinegar (and spices if you want)
INGREDIENTS
- 100g of salt to 1 litre of water.
- For 1 to 1½ kg of onions.
- 1 litre vinegar
- Spices - try whatever
>>Heat the water and salt together until salt is dissolved. Allow to cool before placing peeled onions into the solution. The onions should be left in the brine for 24 hours then pickle
PICKLING
- Allow onions to cool and put in jar
- Cover with vinegar
- lid jar
Done! In this I used rosemary and black pepper and cumin seeds to spice it up a bit.

How to cook brown rice
Here are the instructions:
Put brown rice and water together in a pot with a lid. Use the ratio of 1.5 cups water to 1 cup rice. I normally make 3c rice with 4.5c water for a single batch.
Set the heat to maximum, and bring the rice/water to a boil uncovered. Then put the lid on the pot, and reduce the heat to low/simmer. If your lid has a steam valve, keep it closed. Let the rice simmer for 20 minutes.
Turn off the heat, and let the rice sit in the covered pot for another 10 minutes. It’s OK if you let the rice sit longer than 10 minutes (20 or 30 minutes is fine too), but don’t let it go any less. I prefer my rice to be slightly chewy, not mushy, so I usually remove the lid after 10 minutes.
Eat and enjoy. Be careful when you remove the lid, since a lot of steam may escape when you do.

Masterchef Motivation
Ingredients-see details
250g gigantes beans, soaked overnight¼ cup extra virgin olive oil
3 carrots sliced
4 sticks celery, sliced
½ brown onion, diced
1 garlic clove, sliced thinly
½ tbls thyme leaves
50ml sherry vinegar
1 tbls tomato puree
500ml chopped tomato
500ml vegetable stock
Salt, to taste
¼ bunch parsley, roughly chopped
Method
1. Place olive oil in pan, add carrot, celery, onions and garlic. Sautee briefly.
2. Add the beans and stir to combine.
3. Add thyme leaves.
4. Add vinegar and tomato puree, mix together.
5. Add in chopped tomato.
6. Add vegetable stock and add a little more olive oil.
7. Place in oven at 180 degrees for 30 minutes.
8. Once out of oven add a little more olive oil, season with salt and finish with fresh parsley.
9. Serve in pan.

5 minute chocolate cake
Ever at home and want something sweet but can't be bothered to do anything? I am sometimes so this recipie I found is just great. I'm gonna try it with some other vatiations and I'll et you now ow I get on. A simple recipe for green beans
Green beans recipie
Ingredients
1 pound fresh green beans or frozen French-cut green beans
Salt
1 to 2 tablespoons unsalted butter
1/4 cup slivered almonds (2-ounce package)
1/2 lemon, juiced
Ground black pepper
1 can fried onions
Directions
Bring 1 inch of water to a boil in a high-sided saute pan. If using fresh beans, cut them lengthwise while you wait for the water to boil.
Add salt and green beans to boiling water and cook until just tender. Drain beans and rinse under cold water to stop the cooking. Return the skillet to medium heat and add the butter. When butter is melted, add the almonds and cook until golden brown.
Return the green beans to the pan, along with the juice of 1/2 a lemon, add salt and pepper, to taste. When warmed through, top with fried onions.

How to make humus
1 400g of chick peas

2 garlic cloves Chopped (finely or grated)(or 1 large)
sat & pepper (to taste)
cayene pepper

Soaking Beans
I soaked some beans the other day. Kidny beads and some others. Seemingly I've ruined them as beans shouldn't be soaked for longer than 12 hours.

If you buy dried kidney beans, it's important to cook them properly. This is because kidney beans contain a natural toxin (called lectin) that can cause stomach aches and vomiting. However, it's easy to destroy the toxin if you prepare the beans properly.
Follow these three steps to destroy the toxins:
1. soak the dried beans for at least 12 hours
2. drain and rinse the beans then cover them with fresh water
3. boil them vigorously for at least 10 minutes
Then you need to simmer the beans for approximately 45 to 60 minutes to make them tender.
If you buy tinned kidney beans, they have already been through this process so you can use them straight away.

Easy Mexican
We cooked mexican tonight we thought that we could cook this a few times and then take the ingredients to work and have them as a toasted sandwich (as it is more portable)
It took about half an hour
tablespoon olive oil
1 onion, chopped
1/2 teaspoon ground cumin
1/2 teaspoon sweet paprika
1/2 teaspoon ground coriander
1 X 200g can baked beans
2 tablespoons mild taco sauce
1 X 400g can red kidney beans, drained
4 sheets Mountain Bread
200 g reduced fat grated cheddar cheese
3 tomatoes, diced
1/2 cucumber, diced
1/2 iceberg lettuce, sliced finely
Method:
1. Heat oil in a non-stick frypan and cook onion until golden. Add herbs.
2. Add baked beans, kidney beans and taco sauce and cook until thickened.
3. Place a generous spoonful of mixture on each half of Mountain bread. Cover with tomato, cucumber and lettuce. Roll up firmly and serve.
